smokey vegan sausages with summer salsa


It really feels like summer is here now (only a matter of days!). The nights are warm and the markets are full of berries, stone fruit and basil. To celebrate the warm weather I have been thinking of delicious meal ideas for taking to the numerous BBQ's and beach days that  I am sure are coming up. On this theme I decided to create something quick, portable and summery to test run for the summer nights to come, and oh my goodness this one is a winner! I will be making these again very soon..... now I just need a BBQ date... anyone?



Vegan smoked sausages 

1 tin chickpeas drained and rinsed 
3 tbsps oilve oil
1/2 cup gluten flour 
1/2 cup bread crumbs
1/4 cup of water
1 tbsp tamari 
2 cloves of garlic minced 
1/2 tsp dried basil
1/2 tsp dried thyme
1 tbsp smoked paprika (make sure it is proper smokey paprika)
pinch of died chilli (or however much you like)

To make the sausages place the chickpeas in a foodprocessor and pulse quickly until roughly chopped (not a smooth puree, we want a bit of texture here). Throw in the rest of the ingredidents and pulse quickly to combine. If you have a dough attachment swap to this one now or tip out the mix into a bowl and knead it with your hands until you can see the strings of gluten form in the dough. 
Push the dough into a ball and then cup into eight pieces. Roll the pieces into whatever shape you like. 
Heat a frying pan or BBQ with a little olive oil, cook on each side for about 6 mins. 
Serve wrapped in a lettuce leaf or piece of tasty bread with summer salsa, squeeze of fresh lime and coriander. YUM.
 
"Summer Salsa"

4 Nectarines (or peaches) diced
2 avocados diced 
2 tbsps olive oil
pinch of salt
(other add in ideas include: fresh chilli, coriander, lime juice)

Combine diced fruit and avocado in a smal bowl. Add olive oil and salt and leave to rest for a few mins to combine. 

Fresh coriander, lime and lettuce leaves to serve.
