coconut chia pudding


This is my kind of sweet treat. Chocolate enough to be a dessert and healthy enough to be eaten for breakfast. And best of all quick enough to make any time. What else could you want?


Coconut chia pudding

4 tbsp chia seeds
1 cup coconut milk or coconut water
1 tbsp cacao
1 tbsp carob powder
1/2 teaspoon stevia powder (or 1 tbsp maple syrup, honey etc)
2 tbsp shredded coconut

blueberries to serve 

Process
Mix the chia seeds, coconut milk, cacao, carob and stevia powder in a small bowl and leave for at least half an hour and up to over night. the longer you leave it the smoother and creamier it gets.  When ready to serve place the mixture in small bowls and decorate with blueberries and shredded coconut.
